Offer vs Serve Course on the School Nutrition Toolbox

Offer versus serve (OVS) allows students to decline some of the food offered as part of school breakfast or lunch while still having a reimbursable meal. OVS was instituted to reduce food waste and to allow students to choose the foods they want to eat. Because students may decline some selections under OVS, training is needed on what constitutes a reimbursable lunch and breakfast. This module provides information that is useful for all levels of school food service personnel about the requirements of OVS.

Collection of Breakfast Promising Practices

Collection of Breakfast Promising Practices

Creative strategies to maintain successful breakfast programs are employed in many of Pennsylvania's schools. Foodservice staff at these schools, often in collaboration with personnel from other disciplines and from the community at large, devise innovative plans for increasing breakfast participation rates and improving the nutritional quality of breakfast items, all while gaining support from various stakeholders. Transforming a section of the school library into a cafe, using peer education to promote breakfast, serving breakfast in the hallways, and inviting parents to participate in the breakfast program are just a few of the many success stories described here. The schools and districts represented in this collection have shared their successful tactics by way of Project PA's "Promising Practices" reporting system. These School Breakfast Promising Practices offer insight and advice about beginning and sustaining successful breakfast programs for all grade levels, elementary through high school.

Promoting Farm to School Programs in Pennsylvania

Promoting Farm to School Programs in Pennsylvania

Farm to School programs connect schools with local farms to provide healthy foods in schools, improve students’ dietary habits, provide hands-on nutrition education opportunities, foster stronger connections within communities, and support local farmers. Farm to School programs take on a variety of forms and may include classroom lessons about agriculture and farming, school gardens, trips to local farms, taste-testing of local products, school markets, and integration of locally-produced foods into school meals programs, among others. Project PA, with funding and support from the Pennsylvania Department of Education and Pennsylvania Department of Agriculture is initiating a project to promote Farm to School programs in Pennsylvania. This program will provide examples of successful Farm to School programs and resources and assistance to help schools start these programs.

Farm to School: Keeping it Safe

Schools are working to provide healthier meals to students and teach them the skills they need to make good decisions about nutrition and health. As part of these efforts, there is growing interest among schools in Farm to School programs. While a primary objective of Farm to School activities is to connect schools with local farms to promote purchasing of local foods for school meals, a variety of types of activities fall under the Farm to School umbrella including school gardens, nutrition and agriculture classroom lessons, field trips to local farms, and taste-testing of local products. In addition to providing healthy foods in school meals programs and providing students with health and nutrition education, Farm to School programs support local farmers and therefore strengthen local food systems.
